Jon's Pizza Recipe

Materials:

1 (9"x12")Pizza Crust - Pillsbury roll (or make your own)
1Baking pan (glass pyrex 9"x12" or 12" round) or pizza stone
1 ozUntoasted Sesame Seeds - get in bulk from a health food store
2-3 Tbs.Olive Oil - get the best you can find, such as Colavita
8 oz. Tomato or Spaghetti sauce (such as Mama Rizzo's or Classico)
or: Pesto (basil sauce)
2 ozShredded parmesan cheese (optional)
4-6 ozShredded Colby-Jack cheese
4-6 ozShredded Mozzarella and/or cheddar
4-6 ozCrumbled feta cheese
 Herbs and Spices
Veggie Toppings (use any or all):
1 Tomato, vine-ripened, sliced into little chunks
1 ozOlives, Green or black-with-pit, sliced
4-6 leavesSpinach, sliced into small strips
1 slice dicedOnion (Sweet Vidalia, Hawaiian, Red, or other)
4-5 clovesGarlic, chopped into little chunks
1/4-1/2Bell pepper (green, yellow, or red) cut into pieces
1/2Carrot, shredded or thinly sliced
1-2 stalksCelery, cut into small pieces
1 stalkBroccoli, cut into small pieces and lightly steamed
4-5 stalksAsparagus, 1" bias cut pieces, lightly steamed
1/2 or 1/4Avocado, sliced into little chunks
2 to 8 Mild pepperoncini, sliced into rings
1/2Serrano green chili pepper, chopped into small pieces
Method:
  • Preheat oven to 450 degrees.
  • Cut up all veggies ahead of time.
  • Pour 1-2 Tbs olive oil into pizza pan and sprinkle liberally with 1/3 of the sesame seeds.
  • Unroll Pizza dough and spread out into a 9"x12" pan or 12" round pan.
  • Pour 1-2 Tbs olive oil onto pizza crust dough.
  • Sprinkle liberally with 1 Tbs. sesame seeds.
  • Sprinkle 1/3 of the shredded parmesan and 1/3 of the shredded Colby-Jack cheese.
  • Put pizza in oven to prebake for 10 minutes.
  • Pull out pizza after the crust is half-cooked (cheese should be melted and bubbling).
  • Spread out tomato sauce (or basil/pesto sauce) and sprinkle onto it your favorite herbs and spices.
  • Sprinkle on more shredded cheese.
  • Lay out all the veggies on the pizza like a work of art.
  • Add the rest of the shredded cheese.
  • Sprinkle another layer of sesame seeds.
  • Put pizza back into hot oven for 10-15 minutes.
  • Pull out pizza and munch down!
